Imagine a place that’s like no other, yet so familiar and grounded.

After waking from the night you spent in your chalet, you wonder down a pebbled path to the café perched just on a hill side. You meander to the counter where you order a latte, and you take on the  difficult task to find the right pastry to complement the hot beverage being made just for you.  You not only smell the aroma of the coffee in the air, but the smell of fresh bread being baked just behind the counter in the bakery.   While the smell of bread and pastries being baked is intoxicating, your nose is reminded of that coffee smell.  You follow its trail just outside where you see a coffee roastery a few steps away – you notice

the sign that says roasting and espresso making classes daily at noon.  Three steps backward and you’re back in the café. You’ve decided on a croissant as the complement to your coffee and make your way to a table just on the terrace. The Italian inspired Terrace is next to an open space where a few folks have already started their day by playing petanque.


In addition to being rustic, the terrace gives you an amazing view of the multi acre property that seems to go on forever.  Before you is a sea of olive trees with water bodies strategically positioned to give you pockets of visibility through the trees where you see glimpses of a majestic 18-hole golf course featuring replica holes from around the  world.  Only the best from Augusta National, Pebble Beach, St. Andrews, TPC Sawgrass and others are just waiting to be played. 


If golf isn’t your favorite past time, perhaps making pasta, bread or cheese is more your style.  On the property, guests are treated to hands on exhibitions on how to turn simple ingredients into magical outcomes.  If you’re lucky, you’ll be on property when they are pressing the olives. 


The tree’s you see around you are not purely for decoration, they provide the“oil” that keeps this place moving.  Olive oil is the corner stone for just about everything in the restaurant.  If it’s not in the food, it’s at your table being used to power the hand-crafted copper oil lamp.  If you don’t end up visiting the restaurant, you’ll still have a chance to enjoy the olive oil because it's a key component to the soap you received in the care package when you arrived.


Your day gracefully matures into an evening of Tapas in the beautifully candle lite garden near the restaurant. Yes, you’re actually next to a vineyard – it’s not the largest vineyard you’ll come across.  However, the wine produced here is not measured in quantity but rather in quality.  Soon comes the paella, then the short jaunt to your chalet where you’ll fall asleep dreaming about your day only to repeat it again tomorrow.
